Cards and Recipes

I made these cards with some of the left over paper from the Mango Frost Mat Stack I had.  I've always had a hard time decorating the front of cards but this time I decided to decorate it like the pages in the chipboard album.  I hope you like them.  I have an Etsy store if your interested in checking it out http://www.etsy.com/people/dawngdesigns?ref=si_pr

I made a Betty Crocker meal last night that was soooooo good that I had to share it with you.  Salsa Chicken and Rice Casserole.  It was so easy to make the only thing make sure you have medium size chicken breasts.  Mine were to big and I had to take the rice mixture out and cook the chicken  longer.  Here's the recipe:

1 can (10oz) Old El Paso enchilada sauce
1 cup uncooked converted white rice (I used Uncle Bens)
1 cup Old El Paso Thick 'n Chunky salsa
2 cans (10 3/4 oz each) condensed cream of celery soup
1 can (15 oz) black beans, drained rinsed
5 bone-in-chicken breast halves with skin

1.  Heat oven to 325 F.  Spray 13x9-inch (3 quart) glass baking dish with cooking spray.  Reserve 2 tablespoons enchilada sauce for brushing on chicken.  In large bowl, mix remainig enchilada sauce, the uncooked rice, salso, soup and beans, pour into baking dish.

2.  Arrange chicken, skin side up, over rice mixture.  Cover tightly with foil.

3  Bake 1 hour.  Uncover; brush chicken with reserved 2 tablespoons enchilada sauce.  Bake uncovered 1 hour longer or until chicken is for-tender, its juices run clear and skin is slightly crisp.

Makes 5 servings.

  1. Love the colour combo on these cards. To answer your question about when I started blogging. I started before the dawn of "blog time". Actually I just checked the earliest post I have on my "writing" blog. it's from October 4, 2001 and I've kept it private. I guess that was my first blog. Back then I learned html so I could write from scratch. Now none of that is necessary. So much better! Blogs have really evolved from the written form to the "display/revenue" form we see today. I guess I started a "display" blog back in 2010 but never did much with it although I did follow a few. Now that I've been encouraging Laurie to get more of her stuff up I sort of got interested in it myself. Maybe we inspired each other somewhat. I'm just glad to be doing it. I have so much to talk about - blah blah blah! lol

    1. Your so funny. You can talk as much as you like. Laurie is the one who talked me into setting up a blog. Maybe the three of us can skype together. Laurie and I skype most every day. Looking forward to meeting you.

  2. Wow I can't imagine where Laurie has the time to Skype with you every day.. she does the same with me and has become a very close friend. I would LOVE to try the three of us on Skype. I've done it with one land sorority sister here in Canada together with her natural sister who is one of my online sorority sisters. Wonderful! So you Have remarried your x husby! Now that deserves a double dang WOW!
